So you choose if they will be more in building or carry stuff etc
The worker post is a tool if you want to try to optimize how your workers do their jobs. For example you can have a fixed amount of workers which transport goods from A to B, even though you have tons of open construction or harvest orders. Or if you have a poison invasion, you can set all worker post people to harvest to try to get rid of the poison plants as fast as possible (though you have to select / harvest them manually by clicking).
So it's a tool you can use, but you don't have to. Play around with it, maybe it works for your playstyle - but there are also people who say it's a bother and it's too micro-manage-y for them.

the little speed boost it gives them is nice, and it makes sure jobs get done that might otherwise not, like resources being carried to where they need to go
I like to build 4.
1 for each type of worker then just add or remove workers as and when they needed.
It's a good way to know where they are and how many of your workers are doing what
On the other paw... if those particular set of villagers have nothing to do, they will hang around their assigned Worker Hut? So there is a smol advantage in putting the Hut close to the 'action'. So they don't have to walk as far if you give them an order.
But the tail end of it is that you shouldn't have 'idle' villagers who are assigned to a Worker Hut anyway.
