I never had any probles in the game engine if I script my own things (nodes in Unreal)
And I never had the problem that I can't enter the stairs to go upstairs without crouching.
This is because of the use of assets (free or paid). With a bit of knowledge of 3d modelling and scriping you come a long end. Without it, devs gonna end up like this.
Kinda logic
The time it takes for a baby to grow into an adult various by the species. For a cow, I think it's something like three in-game weeks. I think its the same for a pig but I haven't raised them yet so I'm not sure. For chickens, five days sounds about right. It also takes three or four days for them to hatch. Try checking out the guides - there are some really helpful ones - and if you can access my questions history, feel free. I've asked some basic and interesting questions about animal husbandry in this game before including how best to keep certain animals and how long it takes a targeted species to grow up.
As for housing chicks, you can place them in a nursery pen or coop and they will hatch. They technically don't even need a coop! They can be placed on the ground outside of a pen and they should hatch, barring the glitch. But to keep them from wandering off and starving, I'd suggest a pen or a coop.
Honestly, I wouldn't keep all of the goats together - it would be too hard to manage them all. Sure I'd have some time of not needing to manage them, but then that'd be followed by multiple days of culling of and processing, and I find that too arduous. I'd rather have the daily micromanaging to keep things from getting out of hand in the first place. I'd have a few breeding pairs - maybe enough to where there is one kid born per day, or two or three, whatever your production goals are. Then I'll separate the kid on its first night and place it in a pen with the other kids. When a kid grows up, it gets separated again and placed in a pen with the others of its gender to await slaughter or sale if you've got as many females as your production goals allow. I plan on doing something very similar to this with pigs, but I've already done this with some beef cows and it worked pretty well. And you can set the females up to be milked while they're waiting so that's additional milk production!
