Might also be worth to get 3 seperate harvesters, one for each crop type, so that you can save some time driving to the shop or the time switching fields. At least that's what i plan to do eventually^^
If you are buying separate harvesters for each field, and want to color coordinate them, make sure to pick up the header first. Stop at the paint shop with the header attached and it will paint to match.

If you are as talented as my friend, you may be able to come up with some shortcuts. I've even seen her haul a cow on the hood of a UTV, but I don't have a screenshot of that.
