How do i know when to milk my cows?

Yes, you can milk twice a day, after 8 am(08h00) and after 4 pm(16h00). It takes 3 cow milkings to fill the can, so just 3 cows will get you 12 wheels of cheese per day. If you add blue mold and an egg, it's pretty good money. Especially if you wait for a good multiplier at the restaurant.

The game is pretty forgiving. If you don't have time and miss milking the cows, they don't dry up like in real life.

Won't let me put white mold in the pan on top of the compact cooker.

There are different white molds, one is for goat milk.

That sounds like a bug. Maybe a save and restart will straighten it out.
