How do i make NPCs hold items?

pause the game, hover the item over someone's hand in the position you want them to hold it in, then press F on their forearm

you can use pickup advanced dlc (its a mod) to grab items that cant be grabbed normally

Keep in mind that for this, you must HOLD f instead of just tapping it
