I didn't want to dig further as my colony was in a death spiral so I had my science ship stop after half exploring Saturn and leave - is there a way to go back and do it? I can't see how

No. This is bullcrap part of events - you can accidentaly leave the event screen, you lose it foreva - no coming back

Yeah this is annoying, I left Uranus thinking I could come back to harvest the Tree, and there was no option to go back. Makes no sense whatsoever

Only leave a event when there's an option that says to leave and 'come back' if that message doesn't appears, don't move the research ship anywhere else until you finish the event

good advice ^ and yeah I fell for that too. No reason you shouldn't be able to go back and risk the wild animals / fungus again to go deeper
