I have a variety of furniture and decorations, to appeal to everyone. There are quests to put different animals in the cafe too, that might help? For example, Lumi likes arctic animals, Freya likes birds, etc.
I always have 2 sweet / 2 savory / 2 fancy and I rotate what's in the case, every couple of days. People will come in to buy their favorites.
The more people you meet, the more will come to the cafe. Just ignore the "stuck at the game" animations. They don't matter. You don't have to be in the cafe to make money, in fact it seems to work better if you're not there. I just go about my business, exploring, doing quests, etc, and the money rolls in.
