Quarries?
When is the point where I should buy the next quarry?
And when I bought the next, should I continue to expoit the starting quarry?

You should move away from Ember Cradle when it suits you, I'd say its quite important as these dig sites are much deeper. You'll be able to get different types of resources at the deeper depths, and resource size scales up the deeper you go.

Various sites have various available Water resources. South Hope has a beach on the far side from the road. Dreck Quarry has a small pond at the Far Side. Mildew Aquifer has water at the bottom. Icehelm has a small pond just outside the Mining area.

Do the different layers in the quarries have different colours?
I fear that i dig to deep for the tier 1 drills.

yes
use t1 tools and you cant go more than T1 digging
use t2 tools and you cant go more than T2 digging
if use nuke destroy all to T3

More to the point of your question, there is a "texture" change between the various Tiers. It can be a subtle change, especially if you've been working between layers for a while, but it is visible, as well as detectable by the proper Tool use. As @cricri said, if you ONLY want to dig to the bottom of T1, use T1 Tools, purchased from the Shop at Ember Cradle (EC). If you want to dig to the bottom of T2, then use Tools purchase at the Shop in Bridgepour. As T3 is the highest level CURRENTLY available in the game, use the Mole to dig an angled path down to the bottom of T3, continue to use it to clear out the bottom level to make space for the Mining equipment, and then start placing your Pipes for Conveyors. Once you have that path, you can lay Pipes for your Miners (I recommend they branch off your source supply BEFORE the beginning of your Conveyor run, such that you can place a Valve to separately turn off your Miners vs your Conveyors, Harvester(s), Sorters, Gem Compressors, and Smelters).

Don't forget to plan for regular placement of Pressure Tanks, to keep Water Pressure at an optimum level. Water Pressure will affect the speed of your Conveyors and drops with each segment of Pipe. A Pressure Tank will restore Water Pressure to the output pressure of your Intake Pipe. I recommend building the Pressure Boosters (built at the Icehelm Big Forge) that get placed on the Intake Pipe, to optimize said Water Pressure levels. You'll also need Pressure Tanks along the Miner run, as the Miners will stop working if the pressure drops too low.

I already scraped my T2.
I try the T3 and look if I see a different dirt colour.
