I'll still have a lot of fun, but I get overwhelmed quickly and this helps me get my brain into a different gear for a different kind of game. I need to combine my Sims3 knowledge with my Settlers and Anno one :)

Just build up slowly is my best advice, don't worry about rushing through the technology tree. Get your farms up and build lots of storage for your food and resources.
Once those are nice and full you can start to branch out your technology and get some livestock (if you haven't already). I'd start with just pigs for meat. Cows seem to be really hard to keep tame and the cost a lot of apples to feed, plus you can't do anything with the milk until you have a kitchen.

...it doesn't make any sense dying from starvation while there's milk .
Oh haha, poor you! So in the profession tree, you can see all of the different skills they can gain with their level ups, right? You need to click on the skills you want them to spend their points on. Like just click on the words, like you do with the research tree. Cooking at campfire costs one skill point.
It sounds like you already know where the profession tree is but just in case, its the hammer icon to the right of each character's face in their menu bars.
By the way, skills level up faster when you read about them from the bookshelf rather than doing the actual thing, so get them all reading about farming and spend their points and soon everybody will be able to cook at the campfire. I can't imagine how you've survived for multiple winters without baked potatoes! :D
