Start off being able to clean and do maintenance to firearms via ordering parts. As you level up and gain money, you can purchase equipment to upgrade the shop and unlock new, more advanced jobs. It's not too far off from how the game works, and it just makes more sense.
I love the idea of the display room as well, and could be done the same way as stations/equipment, where they are unlocked FOR PURCHASE at specific levels. Could even have "expansion" unlock/purchasable as you level.
This also ties into another idea id like to see: free building. Being able to purchase the much cheaper raw materials (wood, steel, etc) and freely create your own parts from scratch, thus building guns from scratch. This is very rewarding for getting your level and cash up, to be able to free build guns from scratch.
As you progress levels, new equipment and such becomes avail for purchase, and you become more and more capable, and less dependent on just assembling purchased parts.
Much like in Car Mechanic Sim, you start off with basic, low paying jobs, level up to full tear downs and rebuilds, and eventually you have the skills and cash to restore / build cars yourself to make higher profits.
Everything is already in place for these enhancements, and I have already see some talks on here about similar ideas. The game has some good potential.
