How does one change team logos for the teams?

Okay, I kind of figured this out. There is a mod folder, teams, and in there are the things to change.

I have figured it out, and it isn't pretty. There are image files that need to be altered. I actually wrote a review after I saw the pants images. There aren't any templates or guides, and because the images use the main color of the thing (say, pants) as their background color, you can't see where anything is. It's a mess to try to figure it out.

The helmet images are also a mess. They look like a helmet exploded. I get that image files are like that to some extent, but the designers need to control for that and provide an easy to work with template that aids user in creating new files, not something that makes it so daunting they never want to try it.

If you want to, go into your options and select that you want to use mods, deselect the base teams. Quit the game. You should now be able to search into the file structure for the game and find mods folders, team mods, and under there, you will see a couple of example teams.

Creating the logo images won't put the images on the helmets, though. You have to actually find a helmet image file and edit it, put your new logo into the helmet image and save it. Seriously, it's pretty difficult.

So having made a team (ft. laurderdale flamingos) I would honestly recommend this guide which really helped me. https://steamcommunity.com/app/932980/discussions/0/1739968490571355015/ although 2018, the rules still work. But basically I would highly recommend copying the team and going from there.
