How to avoid the branch monster things?
Apparently I have to not attack them and I get the best ending, but during the first monster encounter, I turn my light off, and crouch, and look down, but they still know where I am and kill me?

From what I understand to go for that achievement of not attacking ever you have to pretty much use the camcorder as your main source of light when in an encounter. I don't know if you've finished the game at all yet but it later explains that their attacking is proximity based. So as long as you don't get too close to them you can just walk away.

Keep an eye on your dog - he signals when he feels them (and he usually does so before you can see/hear them).
When you are close - the sound is important so you can avoid the area.
Sneaking/Crouching is important (especially when the dog signals).
Actually you don't have to crouch at all, I've done a whole playthrough without ever doing that.
You hear the wood cracking sounds from the tree and indeed look at Bullet a lot. You'll see the monsters moving inside the trees that they're in, through the camcorder (not looking at them is later in the game).
Never use your flashlight and you should be fine. Just don't get too close.
There is only one part where you have to run to get through them, that's the part with the rolling leave monsters.
