If it's anything like the previous games Simplified creates an unfair advantage online, you can just whip the bike around turns with no care real care, don't need to think about how you tilt the bike, you don't need to really think about how you land very much or how you accel out of a turn and there is no-disadvantage for racers choosing that over pro online and you will have no idea what people have selected.

Just choose what you like, I find pro-physics more enjoyable to need to control the bike a lot more but it's really up to the kind of experience you want for yourself.
I came to the same conclusion of the both of you. I do find advanced more fun to play with, even tho in multiplayer most people use simplified physics, which lets them bump other player freely, not wheelie as much, gas in corners like it has no consequence and a bit more things.
Imo, Milestone should make a 0.95x speed multiplier for multiplayer for those who use simplified physics.
