Language

Accidentally selected Japanese when I started, now I can't find the option to change language to English. Does anybody know how to fix this?

no clue, my japanese is unexistant^^

not 100% sure but maybe verifying your game files restores it?

Start in offline mode, then press Y or X button, don't remember which one, and it shows the language selection.

If that doesn't work, then delete your save.

This is it. You can point your phone with the Google Translate app(using camera mode) to the screen to help you find the option

I have translated everything in the settings, and i am seeing no option for language, nor an option to delete my save

It's not in options, again launch the game while offline and in the main menu, where you se the "Logs", press Y or X on a controller.

This should open the list of languages.

For deleting the save, you need to manually delete your file from your userdata folder.
