As for bosses it depends on how you wish to beat them and what kind of boss you're fighting:
For example if you're fighting Tashigi she will have a defence bar meaning until you break the gauge she will take less damage to health. Purple indicates that they're weakened. As for me i just use my Maxed out Kaido to tank and obliterate everything.
Edit: Forgot to mention if you're fighting a Logia type:
Example Smoker, when he activates a full force boost he will become invincible until you break his defence gauge.
So basically i try to drop the grey bar and shields with normal combos, and then when they flash purple i use the big skills to eat out the health?
And how i know when they activate the force boost? There's some common visual effect or depends by character. Akainu for example seems invulnerable and does alot of damage when covered with magma: in this case is better to just evade and wait for the his effect drop? (for now i found it the hardest character to fight against)
So, when it comes to Logias, they`ll become enveloped in whatever their fruit is. Smoker will start flying and be really smokey, Crocodile flies and gets covered in Sand, Kizaru flies and turns in to Light, Aokiji turns blue é translucent, Akainu gets covered in magma, Ace gets enveloped in Fire, etc. To remove the Logia state, you have to break a shield on them.
For Armor, when a single bar breaks, they become vaunerable for a short time, and as you said, this is a good time to hit them with big skills, when you break ALL of the shields, they enter stunned state, where they take bonus damage. Shields are easiest to break with normal combos or attacks that hit numerous times i.e Zoros 9 Blade Asura, or Ace`s Flame Fence é Flame Prison.
It is worth noting however, some enemies you can burn down even without breaking them, such as Giants. When I run in to a giant boss, I usually just unload everything I have as soon as I have it, and they die quick enough.
