I hate to tell you this, but you are with more luck by placing your thread here:

despite this is the correct section. There are simply not that many roaming here who are lending a helping hand and even less who have expertise on Mac and Linux.
In doubt, consult a Mac specialised forums. That might work better in your favour the same way I recommend Steam Deck users to use the Steam Deck subforums.
Just in case there is anyone in the future that has an issue like this, thought id throw it out there that I found a solution!
Its not the most elegant, but it works great!
Turns out MacOS devices don't like audio interface with more than 16 channels.
Workaround is to install some form of virtual soundcard (the only one I know about is loopback, but there are probably others) that will pass through audio and lock it to the number of channels you need.
I used loop back to create a virtual 12 in 12 out audio interface and now things are working great!
Game loads up in atmos with no additional configuration required in steam or in game.
