Rugan becomes hostile out of nowhere
I teleported my character using the path with the fallen bridge. Then I persuaded Rugan to pay me for helping them with Gnolls.

I summoned Ogres to kill the Gnolls and Rugan with his companion were friendly towards me (even after I had summoned these ogres).
Then once the Ogres hit the enemies (?) Rugan becomes hostile for absolutely no reason and comes at me?

Is he friends with Hyenas which want to murder him?

I had to replay the whole encounter and walk through the front doors (here goes ability to make use of world terrain I guess...).

This time I persuaded the Gnoll to aid me then simply die. Rugan was happy enough to follow the script this time and give out the cargo with continuation of the quest made available.

I swear it's annoying. Ogres would also work out but Rugan would turn his back on my character even if I sent the rest of my part off into the camp (in case they were categorized as hostile for an unknown reason).

TBH. Entering the front door is easier and less prone to bugs, but less entertaining I suppose, plus you miss out on some extra gold...

PS:
I made about 30 saves trying to figure out different sequences, summoning the ogres later or earlier. Nothing seemingly made a difference. They didn't focus the NPCs either, just the enemies. Are they supposed to be friendly or they just kill everything?

It's not made clear in the story. I assume the "backdoor" playthrough is simply bugged.

Thanks for sharing this bug. I tried the tunnel approach too. I said I need to prepare for battle and then it started when I got close to cave entrance. Summoned ogres and those two blokes became hostile. Best approach to this IMHO is:
1. Not to speak to them at all and just go back through tunnel and near the gnolls.
2. Save game there and reload (might not be neccessary, but it did reset their behavior for me...reloading fixes a lot of visual and other bugs e.g. invisible Mayrina appeared near the coffin as she should have after I saved her :D).
3. Then you should start combat near gnoll chief, (SPOILER, look here if you need more info https://bg3.wiki/wiki/Find_the_Missing_Shipment): ,so he can walk to you on first combat turn (or the next nearest if surprised), because the chief will have some interesting options to share on that turn)

If the bug still exists for you, you should report it.

I reported a bug related to battle of the Grove and it took them at least a few weeks to respond, so reporting these bugs is likely pointless.

I simply started the campaign again and went through it with no bugs anymore...
As to this one. Just go the other way around and persuade the gnoll leader to...
repent for being a gnoll

Otherwise, not sure. Perhaps the ogres also attack the allies. They didn't though. Just a bugged AI.
Kinda sucks, because this was one of few encounters where using the horn actually makes a lot of sense.

I restarted the campaign so many times already that I offed farewell the Commander Zhalk and accepted his sword in reward (it's worth it) - on tactician obviously, because the game is too easy on normal.

So it seems to be the same pattern. You entered through the backdoor, talked to the guys and prepared for combat. As suggested by the ogre leader, you summoned them only during the combat and the 2 guys suddenly became hostile.

Seems to be a bug then ig. I did reload a couple of times (even before combat or entering the cave).
