I just restored my previous version of BG3 from a TimeMachine backup instead. I wish I could give you more, but Larian has been rather silent on the issue of late.
It will be fine soon enough. And the rollback works as discussed. Mac users are using that successfully as temporary workaround.
Rollback to what version - the beta6? I did try that, but then I could not open any of my previous saves. So, no - that wouldn't work for me as the instructions for trying the data 'rollback' are pretty complicated and not something I even wanted to attempt right now.
Thanks for the comments, but I still sticking with my previous comment that Larian needs to allow people to rollback to the previous version just BEFORE patch7.
And finally... it's been over two weeks. If I didn't have my backup, I would've permanently moved onto other things.
I re-downloaded BG1 and BG2 which were iOS-based games -- they run FINE on my Mac now and I was going to start playing them again. And, I will again later.
Indeed, I have very little confidence that Larian will keep BG3 stable in later years. So, I am anticipating that my run-throughs of BG3 will probably be the only times I'll ever be able to play BG3 - EVER.
Larian NEEDS to allow people to 'rollback' to previous versions that are stable for them. I do NOT understand why they will not allow this simple thing.
I am referring to my rollback method which allows anyone to rollback to the version they desire.
There was that one Mac player who had issues with mods and launching the game with the latest version.
Rolling back using my method allowed him to use their mods again with the correct previous version. Not the beta participation selection. I remember you inquired about the method the other day back then before using the time machine app.
It is on Mac even easier to use than on Windows.
first, you gotta turn off Steam Cloud which is in the properties tab. then delete all previous saved games which can be done by opening the launcher and going into settings.

You do not see any progress during the download, but you can see the file size is growing.
You get a "Depot download complete :...." message when finished
(Sadly, I have to say, that the rollback did not fix the crash for me)
