Whenever someone writes they uninstalled something, the first question I have to ask is: with RevoUninstaller and its advanced options? Otherwise it will not do much good with the faulty files most likely still remaining after uninstall and then cause the same issues again next reinstall.
RevoUninstaller is a support tool, as it scans for any leftover files of an app. And Baldur's Gate 3 leaves plenty of leftover files in Window's AppData and even in Steam's userdata folder. If not dealt with those leftover files, it is like leaving dirty dishes on the dinner table. No matter how often you leave and come back, uninstall or reinstall, the dirty dishes will still be there until someone takes care of them.
A convenient free version of Revo Uninstaller that does not require installation can be found here: https://portableapps.com/apps/utilities/revo_uninstaller_portable if you want to try it out.
If you want just to get your game running again without mods, you can use this

But beware: savegames affected by mods might no longer work, unless you get the updated version of mods.
This might be helpful for your endeavours as well

Step 2: Go to Nexus Mods, Download the latest update to the Mod Manager ( I believe they link you to github) for the file.
Note: Make sure you only have 1 instance of mod manager installed, and make sure it is the latest release)
Step 3: Remove old mods in the mods directory
Your Mods directory should typically look like this (unless you installed to a non-default location):>
C:\Users\Username\AppData\Local\Larian Studios\Baldur's Gate 3\Mods
Step 4: Reinstall the mod manager fresh per the instructions.
Step 5: Make sure your game data path, and game executable path is set in the BG3 Mod Manager under settings> preferences
Your game Data path should be: (unless you installed to a non-default location)
C:/SteamLibrary/steamapps/common/Baldurs Gate 3/Data
Your game executable path should be: (unless you installed to a non-default location)
C:/SteamLibrary/steamapps/common/Baldurs Gate 3/bin/bg3.exe
Step 6: Download the latest versions of all your mods, making sure they all are compatible with the latest version of the game.
Step 7: Within the BG3MM select Import Mod, and select the mod you want to import from the file location where you saved your downloaded mods.
Step 8: Right click the mod in the inactive list, and activate it. so it goes into the active list.
Step 9: Activated mods are loaded, now edit Mod order accordingly based on highest priority (for you) and make sure to check your mods for notes from the creator on compatibility and required load order.
Step 10: Within BGMM3 go to file, and select Export order to game.
Step 11: Launch BG3 and play [/quote]
The biggest problem currently is that BG3 is receiving so many changes constantly that playing with MODS at this point is basically pointless. Each time the game is updated you will be required to get an updated version of every mod you are using, and thus will be required to wait for the Mod Creator to release said update to their mod making it compatible. Sometimes this happens within a day, some times it doesn't happen for several days, and sometimes it never happens at all.
Keep that in mind when modding your play through, the value of your time and the value of your SAVE file needs to be taken into consideration before applying mods, as they may not be available later if the game is updated.

If you want to continue with mods, I would do this
first: make a backup of your savegames on your desktop, and check that they do not get deleted by RevoUninstaller as RevoUninstaller is very thorough
second: delete the game with RevoUninstaller and let the advanced option after the initial uninstall do its job to find any leftover files and have them deleted thoroughly
then reinstall the game, but before putting the savegames back into place, install the game as vanilla first before you reinstall all the mods
and yes, I would disable and remove the mods first, before uninstalling the game
The guide by Night Writer might be useful for you in that regards.
If it still does not work, e.g. a mod fails with the new version, and demands an old version of the game, I would recommend then a rollback of the game version and then eventually consider using a copy for a modded playthrough.

as described in the guide above of setting up a copy and a profile for mods, you would be spared in the future from the same hassle on future updates. unless you are willing and ready to eventually go through the same ordeal again and again with every patch.
Good luck!

The uninstaller you mentioned, it won't delete saves? Ik it effects modded saves, but otherwise are they safe? Or is there an extra step to keep them safe?
The uninstaller I mentioned can affect savegames. Make sure to read the prompts carefully.
It is worth to make a backup of them to be on the safe side.
