It should be okay now.
From everything you wrote it sounds very much like the game's process did not close properly, and then started always the debug profile - because that one would normally only start when there is already the first one active.
And then when you restarted it actually resolves the issue by closing all processes correctly.

Do not use mods if you do not understand them. For mods related issues consult the mods authors.
To do so, go into file explorer, and type in the file address bar, %localappdata%, this will take you to the Local file in AppData. Once there, locate the "Larian Studios" folder, then follow these.
'Baldur's Gate 3' ---> 'PlayerProfiles' ---> 'Public' ---> 'Savegames' ---> 'Story'.
In Story, you will find all your saved games. I would recommend just copying the Story file, and pasting it in a new folder on your C: drive.
Now that you have done that, Uninstall Baldur's Gate 3 on steam, and delete the "Larian Studios" folder that's inside %localappdata%, now you can re-install BG3, and copy-paste the saves from your Story folder to the new one. If the story folder doesn't exist, boot up the game, then close it without making a new save, and it should appear.
Now that you've done that, it should be fixed, While reinstalling the game may take awhile, If none of the other solutions worked, I would try this before you quit playing.
(I wrote this because I tried basically all the solutions to fix it, but even after I thought I got it working, it still popped back up after booting up the game once. After doing this, the problem hasn't popped up once.)
P.S. if you're worried about changed key binds and want to keep them, you can also copy the the 'inputconfig_p1' file in the 'Public' folder and replace it when you reinstall the game, it will save all your keybinds.
You can try to just copy-paste the whole 'Public' folder once you re-install, but make sure to delete the Debug profile first. I'm not sure if it'll work, but there's a chance if you want to try it. Imo it's safer to just copy the saves.

edit: Make sure to delete the Larian Studios, or atleast Baldur's Gate 3 folder before re-installing the game, or the Debug file might pop back up.
