Barb and Monk Unarmored Defense do not stack.
So don't bother trying to make one for that perk; seems that Constitution based Unarmored Defense trumps Wisdom based Unarmored Defense even if the score bonuses are the same.

Correct. It's always been that way in D&D. You calculate your base AC from a single source, whichever is higher. If you multiclass Monk and Barb, it will chose your unarmored defense AC based on which class gives a higher bonus.

Just like you can't stack Mage Armor AC with any other base AC calculation.

I just told you Mage Armor will not work with Unarmored Defense. Unarmored Defense is one way of calculating base AC. Mage Armor is another way of calculating base AC. The two don't stack. Never have. You cannot have more than one source of base AC. You can only add to your AC after calculating base by things like items/armor/shields/spells.
