Note that if you set the toggle to "One Handed" you can still use your "Offhand Attack (Melee)" to attack with your offhand using your bonus action. So you can manually attack with your main+off hand in one turn. Essentially, having Dual Wield on is just a way for you to attack automatically with both weapons.
Regarding weapon sets, it's not possible to have more than a melee set and a ranged set as far as I know. Though, as of now you can freely change weapons at any time, even during combat.
