Shadowheart usually uses wisdom, except for her High Elf cantrip, which uses intelligence. (it is specified when hovering over the cantrip, it shows "int" as attack roll".

Do you have a source for that information? I would like to learn more about it if possible.
If I'm understanding your quote correctly... would this mean I should be able to start as Wizard, multi-class into Cleric, and be able to learn and cast all spells with the Wisdom modifier? (aside from the initial spells learned by taking the Wizard class)

You can test it out, but it should work that way.
You cast cleric spells with Wisdom and Wizard Spells with Intelligence.
Exceptions are for example fireball from light domain clerics. They use for this wisdom. But they get the spell automatically.
If you have not a very specific reason for a minmax built, you do not want to mix different casting classes using different abilities.
