Monk 2 gives you Wisdom to AC, Extra mobility (if going unarmored), flurry of blows and using Dex for attack and damage for all weapons you are proficient with.
another race to consider is Lightfoot Halfling. not sure if the Lucky trait is working (for me it didn't when I tested it) but this + advantage on stealth is nice.
The only thing after 3 levels of assassin that you get is more sneak attack damage, the other abilities... aren't super great unless you're fully invested
Gloomstalker 5 and Battlemaster 5 both get Extra attack... but they don't stack. You only get 1 extra attack.
Superiority dice upgrade at level 7, so either take battlemaster to 3, 4, or to 7.
Feats are granted at level 4 in a class, however, and another one at fighter 6.
The above, GS5/Thief3/Fighter4, is probably the best breakdown if you want all three. This is Extra attack and a feat from Gloomstalker, A feat and superiority dice from battlemaster, and the assassin ambush abilities.
Consider taking the "alert" feat, because assassination critical hits don't work if the enemy goes before you do.
