For starters unless larians been cooking without mentioning, the only classes and subclasses that will be in the game will be PHB ones, while everyone wants hexblade for one dice goblin reason or another it's most likely it won't be available at launch, Wyll already has an established patron in plot who is a fiend, and at least gale and Wyll claim they were both much stronger than they are at this point in time, Wyll probably before being kidnapped was a skilled fighter, he even says something along the lines of "I used to be able to fell a hill giant with ease" I'm forgetting what he says could swat him with ease afterwards but my general point is that he was much stronger at one point.
In your second point though I fully agree that we should be able to choose a deity that our character worships for more immersion and choice of action based on values of the gods.
