Optimizing a padlock/lockadin build
I am thinking of starting a new game and am looking at playing an oathbreaker paladin or paladin/warlock 7/5. Padlock guides I've seen focus on using a two-handed weapon given the pact weapon can make the build SAD. However, from an optimization standpoint, I am wondering whether an end-game build using two piercing weapons and the Bhaalist's armor would be stronger. In a balanced game, I believe this would provide an extra attack (3 main hand and 1 off-hand) but require investing in strength or dexterity (e.g., gloves of giant strength) to support the off-hand weapon. The ability bonus would not apply to the off-hand damage (no two weapon fighting style). However, given the number of available abilities and magic items that add damage that scales with the number of attacks, I think the extra attack, especially with haste, would be impactful.

Alternatively, I am wondering whether a build using the Bhaalist's armor with Nyrulna and great weapon fighting could work. I am not sure how aura of hate would interact with thrown weapons.

On Honor mode Pact of Blade doesn't stack with Paladin extra attack. You're only getting two attacks on level 10.

Which is how 5e rules are supposed to work. If you get extra attack as part of the attack aciton from more than one source it is wasted...why you never see fighter 5/barbarian 5 type builds.

On balanced you don't need to min/max. The only difficulty is the early game, so just pick a throw berserker build and an eldritch knight for two of your party members and breeze through the game.

The only mode where people might want to min/max is honor, but even that's not required.

Just pick tavern brawler, throw stuff, and win.
