Ketheric Thorm (minor spoiler)
So in the fight versus him, he in classified as "Undead".

WTF.

Balthazar is undead. Ketheric isn´t. Unless I didn´t interpret right his past and he WAS killed. But by who?When? Not Jaheira - she says she put an arrow in his eye.

Have you ever won the fight against Ketheric? I think it's pretty clear why he's undead.

Of course I did, but what I´m missing? Who killed and who raised him?

Again that doesn´t explain who killed him, and I don´t know other cases in the game of people being raised by a god.

Also for a long time Ketheric was selunite.

You could go read the plaques in the Thorm family tomb
It's not specifically called the Thorm family tomb, but a regular mausoleum.
The room you access from the medical study's backyard takes you directly to the Kethric family lore puzzle room

Well, did you pay no attention? Because it gets talked about very extensively:

Short bio:
He was a Selunite. Wife got sick & died. Daughter died too. Became a Sharran. Everything gets a good bit evil. Harpers & Druids fight and kill him (Raphael does something too with his buddy Yurgir). Dies and puts the shadow curse over the land. Some hundred years later he gets resurrected by Myrkul. Pact with the other two to become a "Chosen of the Absolute". Oh and digs his daughter out of her grave for a bit of resurrection there as well (spare time project with Balthy).

PS: The arrow incident happens with the "new" Ketheric. Same result as the goblins' try with the axe.

You don't even need to find the extra lore, Kethy explains how and why he's alive in the Act 2 finale. The question could not have been answered more explicitly in the conversation.

OP just did not pay attention during the fight.

I just assumed Ketheric was made immortal before he could have been killed, but apparently that's incorrect. Maybe he was killed by Jaheira, who knows? But I think he did die in that battle, even though Jaheira's story of the arrow in his eye seems to contradict it. He was Sharran at that time. Before he died, he released Shar's power upon the land in the form of the shadow curse. If I understand everything I've read recently correctly, he was resurrected by Balthazar a century later, using the power of Myrkul. He maintained his immortality by siphoning that power from the Nightsong (Aylin), whom he had already imprisoned and had been using to empower his dark justiciars, prior to his defeat and death.

That's the cliff's notes version as I understand it, but I may have some of the chronology wrong. Anyway, yes, he is indeed undead.

Balthazar is undead, Ketheric I would call deathless since, unlike Balthazar and the rest, he isn't a walking corpse.

Well still classified as undead. Game wise they are the same.
