You're not meant to fight him because he plays a pivotal role in a companion quest, same reason you can't fight voss there.
To be fair you meet qudenos (who is an adult red dragon) at level 5. Adult red dragons are CR17 which is designed for a level 11 or 12 party.

That companion is already dead though so it shouldnt matter. If I can kill the companion then why not let me fight the dragon? especially since that dragon literally with its stats would get wrecked by my sorcerer male even solo. Heck, give him 2 dragon buddies and ill still send him to Avernus within 10 minutes.

you can kill "elminster" and brake gale's quest, you can kil laezel in the beginning and never encounter voss again, there is NO a single adequate reason to make voss and the dragon unkillable just by script
