This was pretty well explained by the dialogue.
Unless you mean the prison, in which case same deal. It would take way too long.
It's object->interaction->solution that we've seen for 50+ years in games.
You can't legitimize the level of realism where a pickaxe won't work when very similar things do work in the rest of the game. You're entire product would have to keep up that realism bar. It's just not practical.
OP is right.
Wrong, the pick is used to create fractures in rock by focusing all the force onto a point as small as possible.
I would suggest stealth-killing the two patrolling eyes in front of the cells before doing anything though. Makes the fight much less stressful and gives the prisoners more time to escape before the guards come down on them.
Personally i always grab the hammer out of the tower in the middle.
And it's even easier if you just distract the guards, send 1 person to talk to the captain and 1 person to distract the patrolling guard...
