you can sell them aside from a diamond in act 3

edit: and a black diamond in act 2, but that one is pretty obvious

Black diamonds are sometimes used in unlocks of certain things. More then once. So don't sell all of them off, and usually when you get one the locked use for it isn't far off.

The rest of the gems are vendor "trash"

I think i have read they are leftover remnants of a more advanced crafting mechanic ( like in Divinity II ) that was never fully developed. I don't think they will do that now after release.

Most quest items are useless after using them as well, you can sell those too.
