Later on you can also get lumps circlet to set your int to 17 as well.
My char will be unarmed, so will use the gauntlet slots for unarmed bonus damage.
The potion seems the only way for me to boost strength.
Auntie Ethel sell 3 and she restock every time you long rest and/or level up. So can easily stack up on elixir there. Just be careful to not go to the Wet Land too fast...
After that, you can craft and buy Hill Giant elixir relatively easily.
Make a character you don't take with you and just make them to have the highest medicine check you can and just get double all the crafted alchemy items and you're good for most of the game.
What are you planning to have as the full statline? Why gimp the main stat unless you're planning some multiclass?

I finished game with warrior 8 8 8 16 15 17 and i had blast.
You can build an unbelievable ninja with what the OP is requesting information on.
Use STR as your dump stat. Max your DEX and CON - put your +2 into CON, so it goes to 17 and put your DEX to 16.
Put the rest into something like WIS or CHA (to help with monk spells, or aid dialogue etc etc)- just until level 4 / 5, when you will probably re-spec.
At level 4 get Tavern Brawler - bearing in mind, you will have the Elixir of HGS. You already hit like a truck (especially with flurry of blows), now with TB, you hit like a truck hauling a full load of tree trunks.
At level 5, either get your extra attack or multi-class.
I re-specced Karlach with this and got a Githyanki and Half-Ogre hireling to tag along with her and myself, one of which is an open hand monk and the other a shadow monk, just as a bunch of ninjas
They regain ALL their special attacks on short rest. Honestly - much much more fun than I thought possible and they just annihilate. Imagine all those cheesy movies, of ninja's popping out of nowhere (misty step from cast darkness) and tearing through enemies.
Who needs Elixir of Bloodlust - the fights don't last that long to even drink one, never mind apply it :)
i stole and made like 20+ of those potions before act 2 and i wasn't even rest cheezing...
