Anyways, I'm a Glutton for punishment and I will give my opinion as if you were being serious, OP:
Baldur's Gate 3 is set in a medieval fantasy setting and particularly your party is meant to be experiencing some level of food scarcity from a story perspective.
Veganism, in itself, is not a bad lifestyle, but it is one born in luxury, as you either need to be very particular about what you eat to meet your nutritional requirements and not suffer adverse effects or use supplements to replace missing nutrients, particularly iron and B-vitamins.
Your party is not living that luxury. They will scrape together whatever edible scraps they can find (Shadowheart will even comment on that in the epilogue, stating how she remembers one evening where the party had nothing but fish heads and stale bread) in hopes of gathering their strength for whatever tomorrow will throw at them.
You hopefully wouldn't expect people living through famine to adhere to your morals and ideals, and under that logic, it should be more than justifiable for your party to be eating fictional animals to sustain themselves.
It would make for an interesting challenge run in tactician difficulty, though.
Perhaps not, but you can help yourself to their contents either way.
