Might not have happened if she wasn't so racist and judgemental from the offset.
However her romance is one of the better ones and the Patch 5 ending with her is great. Still Minthara is was and always be the only BG3 Waifu for me
As I've said, I think all 4 lady romances have their plusses and minuses. However, Lae'Zel is the one who shows the most character growth (although this is true too without the romance, though it's less observable.) It's not just that she switches from Team Vlaakith to Team Orpheus. Frankly, everybody keeps talking about this lore on Orpheus ... I don't know it, I guess if I cared I might look it up ... from what I can see in the game, he is a pretty noble figure. Yes, he does seem a little ungrateful for being freed, and basically tells the player they should have just let themselves be slaughtered by his honor guard. But once we get past that, ... he's willing to sacrifice himself by becoming ghaik, for the greater good, or if he doesn't, he really offers great praise for the player at the end of the game.
But back to Lae'Zel, again, it's not just that she switches teams (and you don't WANT to see the epilogue for her if she stays Team Lich Queen Vlaakith) ... I find that she does grow far less xenophobic toward non-Gith throughout the game. Maybe most of all, of course, toward a Tav romancing her. But overall she does grow to respect the non-Gith peoples of this strange "Fay-Run" she's found herself in. She grows to admire other folks in the party like Karlach, even manages (possibly) to get over animosity toward SH. So yes, character growth.
In the Epilogue, it looks like she's managing to heal the feud between Githyanki and Githzerai, which again suggests tolerance may be growing in the Gith races, and who knows, once they get rid of this Lich Vlaakith, there could be some progress for many of them.
I also recommend keeping her on the Vlaakith path to keep her hardened demeanor, romance her, and then convince her to stay in Faerun. I've spent 3 years picking through old Githyanki lore and they don't need a martyr to save them. They are godless beings. The Orpheus lore is ridiculously stupid, and I hate the bizarre religiosity they gave the Githyanki. So I definitely recommend not letting her get involved with githyanki-jesus.
