I also keep local backups of my saves, and I have both clean, unmodded saves and modded saves for this very reason.
Most mods only need to be "updated" in the sense that it works with the new version.
However, mods that change things that were patched/fixed would require a more extensive update since, at least with other games, the coding may have changed.
That sounds like a mod causing that.
And I believe a big chunk of mod authors offering such mods have already updated theirs. It may still take some others a few days. Remember, this is a hobby they do for free. Be patient.

If you're using ImprovedUI Assets, then remove it. It helped me and now the dice works
