But the way it seems romance works in BG3, you can do several companions at a time until certain points (usually somewhere in Act 2 or early Act 3) when someone asks you to go exclusive with them and lock you into their romance. I think there are only a couple who are into poly relationships.

At that point it is too late. How can you accidently romancing Minthara to begin with???
You could use the script extender to start a romance with Shadowheart and remove it from Minthara, but you'd still be missing the previous scenes and I'm not sure how things would play out.

Make sure you save your game before playing around with flags so you can reload it in case something goes wrong.
