Breaking up
I ended up accidentally romancing Minthara at the end of act 2, only to realize this in act 3. I want to romance Shadowheart, but don't know how to break up with Minthara. I was romancing Shadowheart up until this point. Any suggestions?

I don't think you can start Shadowheart's romance in Act 3. You may be too late.

I feel like you may be out of luck: I feel like you have to trigger scenes from way back in Act 1 and 2 to romance Shart. It may not be possible to initiate anything in Act 3.

But the way it seems romance works in BG3, you can do several companions at a time until certain points (usually somewhere in Act 2 or early Act 3) when someone asks you to go exclusive with them and lock you into their romance. I think there are only a couple who are into poly relationships.

Pyromania™ is correct.
At that point it is too late. How can you accidently romancing Minthara to begin with???

Yeah, left that too late. Not sure how you managed that accidentally, but for future reference, starting a romance with anyone when you're already in one usually forces a choice between them.

You could use the script extender to start a romance with Shadowheart and remove it from Minthara, but you'd still be missing the previous scenes and I'm not sure how things would play out.

It is possible to change the romance flags in any act with console commands. But this means to have a bit knowhow to do it. This can be done in different ways, either using the BG3 CE Table or entering the flags directly in the console, If you have BG3SE WITH console installed.

If you are familiar with this, you can check some infos how to do it e.g. here:

Make sure you save your game before playing around with flags so you can reload it in case something goes wrong.
