I wasn't sure how the mechanics worked in BG3. I'm use to Pathfinder, where depending on the spell rank would require at least 10 of the associated attribute + more points based on spell level -- like 14 wisdom for a llevel 4 spell, or 19 wisdom for a level 9 spell etc etc.

2H doesn't have that much advantage damage wise vs 1H, it is all about specific weapon maneuvers and 2H feats. Like polearm mastery allows you attack enemies coming into range, cleave on swords etc.
1H + shield and duelist will give you another damage boost, but you will be limited to non-versatile weapons. I like flails anyway, so that's not an issue to me.
With shield your ranger will have AC20 as soon as you get to druid grove.
Also the number of prepared spells, yes?
No,
WIS save is the most common save in BG 3, IMO. When enemies start using fireballs, then may be DEX. You can't have good saves in everything. Your Knight Ranger build will have good saves in STR, CON and WIS.
