You just use it with nothing in other hand. So it becomes two-handed. Put something in off-hand - it is now one-handed. Simple as.

Versatile weapons can use a shield.
AFAIK if you want to dual wield with a versatile weapon, you need the dual wielding feat.

What do you mean? If you only have versatile weapon in the slot, it's consider 2-hand.

if you have versatile weapon + shield/offhand weapon, it's consider 1 hand weapon, as long as you have both slots occupied by said items

There's also a feat that would allow you to use two versatile weapons in each hand, like two longswords.

A torch in the off hand will work to force 1-h use.

Why would you force a 1h use it you're not taking advantage of something useful in off hand though. I can see some rp potential maybe.

I wanted to know how to change it too. With duelist, 1d8+5 is better than 1d10+3, and there should be a way ti change it without equip anything on the offhand D:

If you're looking to one-hand a versatile weapon to gain benefits of the Duelist fighting style, it's not a thing. Hope that helps.

There is absolutely no reason to not equip a shield in the offhand if you have dueling fighting style.

Also, if you're trying to do the Gandalf (Staff and longsword), you will need the Dual Weapons Feat, but then it will not allow the dueling fighting style since you have a weapon in each hand (staves are weapons, yo).
