The only classes I actually find WEAK are warriors and monks (didn't even test the monks yet, but they are weak in 5e, as much as I like them. Frontliners, but squishy and poor AC)
Just saying monks are certainly not weak in bg3. They are squishy but they can wallop and CC so well.
multiclass wyll so that he is a pact blade warlock and paladin. Max charisma.
Multiclass Shadowheart into circle of the moon druid with her cleric stuff. Max wisdom.
multiclass Astorian into Eldritch knight fighter with rogue. Max Dex and get him the intellect band.
Play sorcerer and warlock mixed and max charisma as fast as you can.
You now have a team that would make any GM in a real dnd game ban them from the table for obviously planning to break any normal encounter.
Melee basher (Lae'zell or Karlach or Paladin Tav)
Rogue (Astarion or Tav if you don't like Tav, non rogues don't get expertise in skills)
Sorc or Warlock to handle CHA stuff, optionally Bard or Wizard if you don't care about CHA stuff.
Charge in with the Cleric, get as much aggro as possible and cast spirit guardians, self heal, self buff, cast blindness, command, hold, silence as needed. Then jump in the fighter to hack away. Range with the rogue and caster.
Sure, that's the thing they do well with their stunning fist, but like I said, if they get targeted they get a really hard time, because there aren't many alternatives
They have low AC, little means of getting it higher and low HP. They also have no mean of heal themselves (none that I remember at least) And it would be ok if they weren't, again, melee front-liners.
