I have always found this the best approach to familiar myself with the games mechanics and story. The game I start and finish has not been created yet. When I do it will be with the best character and approach. The one that suites me the most.
I see no reason to wait for game updates. I'm not having any issues or glitches that are even a little bit showstoppers, and it's not like they are going to add a bunch of actual content with an update, at least not any time soon.
Regarding appearance changes, btw, there's already a mod that (partially) adds that.
Ah, Starfield? Another biggy to look forward to. Bad time to release though. It has to at least be near the bar BG3 has set, or people are going to most disappointed.
I'll be playing starfield if it actually works on release as well..
But for sure in a few months I'll jump back for another run on this..
The two games surely have a lot of overlap in terms of audience, but being different genres I doubt BG3 releasing first will have any kind of substantial impact on Starfield. If it's good.
