Is Dammar hard-coded for antistealth?
OK, I am infuriated. After dozens of saves learning the mechanics, I found a reliable way to steal the +1 Breastplate in Dammar's shop in the Grove. Took my druid, went Cat mode, and meowed to change the guard's sight cones. Astarion was already positioned near the item. As soon as the sight cones are pointed away from me I hide. IMMEDIATELY Dammar turns around and is aware of my hiding. There is no red sight cone anywhere near me. I don't recall the act of hiding making any noise, am I wrong? Very frustrating...

Sometimes it do be like that.

you can't hide in the light, theifing has dark sign so with in a certain range darkness don't matter to them. if you pull him further, then you can get a stealth check, but he will know item is missing and come check the area, so you need to run, during the time he is looking for the theif he can't see any of your party member, the druid who turn in to cat can stay in cat form and he would be fine but everyone else need to either not be there or run fast.

Really? Light affects hiding? Weird, I've never had any effects from light levels and hiding before. Ok that makes sense, but he's facing away from me the whole time. Does he have eyes in the back of his head, programmatically speaking?

When you hold shift cursor literally shows you if you're fully lit, in the shadow, or completely obscured by darkness. Light is a whole mechanic in the game. A lot of items, spells, and skills work off of it.

Yeah I figured that bit out (sun cursor). Unfortunately after some testing, it's not the light and it's not the sight cones. He's just bugged :(
