Why no undead or evil class?
There are only living and good races no evil races to pick :(

Pretty sure racial alignments are gone? They already started moving away from the "Always Evil" monster entries in 3E and as far as I remember races no longer default to alignments

Githyanki, Drow, and Duergar are all evil by nature. Not sure the ♥♥♥♥ you're on about.

There isn't really anything like that in 5E tabletop, and they're doing a (somewhat loose) 5E adaptation. Closest would be Dhampir, sort of the vampire equivalent of tieflings.

Also, it would be a great deal of work to do properly for a small audience, given the less human-like a race, the less they can re-use all the armor and weapon models and animations.

You can still be a bad person. Races of choice aren't inherently good or evil (although integral morality may differ) so it's much easier to play out morality you want.

You’re forgetting about the best lore. Humans are the most evil and will always be the most evil race to exists in any lore

I'm not trying to sell you something but Pathfinder : Wrath of the Righteous does allow you to be come a lich later in the game. You can also become a devil or demon if played right.

The game doesn't allow u to be properly evil anyway, children like githyanki ones are off limits for the player to kill themselves. All u get are poor cutscenes at best like the one in the druids grove.

Because by some logic they are monsters and thus acceptable to murder.
The game's based primarily on the 5e Player Handbook, which doesn't have any undead races. I think the only non-PHB race in the game is the Drow, Githyanki, Duergar, Deep Gnome and certain subraces, but don't quote me on that.

As for classes, well... in the decade of 5e's entire publication history it has only gotten ONE additional class. This was the Artificer, a class originally introduced in the campaign setting of Eberron and that Larian have said they don't intend to introduce to their version of the Forgotten Realms setting.

The races we may see more in the future, Larian don't want to announce anything until they're sure they can add it, but I'm pretty sure that 5e as a whole doesn't have much in the way of undead races anyway. I just went through the entire race list on DnD Beyond and the only one even close to being undead are the dhampir and reborn, which aren't actually races but Lineages - a kind of modifier or change added to other races. And Larian could avoid these the same way they avoid the Artificer because they were both in Van Richten's Guide to Ravenloft, a setting book that's distinctly not a Forgotten Realms book.

Honestly; DnD's devs (or the marketing corpos deciding what will or will not sell regardless of what the truth might be) have been pretty lax and lazy on race design in 5e. The only ones that are really interesting are all from the first two editions and even a lot of those kind of got screwed for their 5e rendition, becoming much blander than their original counterparts.

Most drow are evil and most Gythyanki are lawful evil.

This isn't Divinity. Please, read the publicly available SRD for D&D 5e before asking things to be more like DOS. WotC didn't hire Larian to add some 5e rules to the Divinity lore.
Full races: Drow (although WotC's been trying to change that lately), technically Githyanki (Githyanki monster stat blocks have a lawful evil alignment). Also Gnomes if you're a fan of Kobolds.
Subraces: Duegar

Nothing as far as undead goes, though necromancy spells are an option for Wizards.
