Though at that level, ghouls are basically cannon fodder for any enemy you face. So it ends up being a "here's a free 1 LR spell" with no narrative or story impact.
But in Act 3 In House of Grief, you can interact with the Mirror of Loss. It has a high religion check in order to get a permanent +2 stat bonus. You can offer the forbidden knowledge (book of thay buff), this will guaranteed you get +2 stat bonus.
