If you want gameplay play the game on Balanced or Tactician.
It makes sense to not le them multiclass. So they don't mess up their character.
If only Larian was there to stop me.
You get a respec option for EVERYTHING right at the start for your camp.
The build argument and more so the BLOCK when you even switch for one scene or battle back and forth between difficulties does not make ANY sense what so ever when you are talking about game mechanics.
Old Baldurs Gate has it.
The Pathfinder Games have it.
And plenty other RPG games also.
There may be players NOT new to D&D, but new to BG3 and 5E who still would love to see as much as possible of the story first before they begin to try all that new and old and changed stuff. (And I already read a comment somewhere of a player like me who finds some things confusing, while having no problem with the older systems.)
And what about players who just want to save time on their second/third/... run? The game appears to be huge, and combat takes a long time with being purely turn-based. I have to admit that on some runs I put Story Mode or even the Cheat Console on for the old BG games, because I didn't want to spend another 100+ hours just to see how certain decisions would change the outcome.
Anyway, why not let the player choose? People should be allowed to mess up their build, otherwise it feels like being punished for having the wrong preferenes or for being too old.
And what about people who are after hardcore roleplaying rather than hardcore combat? I can't be the only one who wants to make choices based on personal preference and roleplaying potential rather than pure min-maxing.
