What’s the point keeping it, you can’t change it to a different stat so may as well use it right away

As for the reason why not to eat it right away; it was my hope that this hair was one of the few ways to get a stat >20. So the plan (originally) was to use "Ability Increase" to get the main stat to 20 (the soft cap for that feat), then use that hair to get it to 21 (then whatever boost in Act III if any) to get it to 22.
If the hair also can't go past 20, then yes, this was a mistake.
If you can't find the Auntie Ethyl's Hair item in your main characters inventory check the inventory of your other party members.
Playing through that tonight I defeated Ethyl early and had to finish off the minions after she left. What I didn't notice is that when the reward screen came up, the current selected character reverted back to the combat order after I won the roll for the hair - and put the reward in THAT party members inventory instead of the main player character.
Going back to that moment I discovered you can change the current character while the hag hair reward choice screen is up. So unless combat rotation just happens to be on your character - you have to select them to get the reward in your inventory or later take it out of the inventory of whatever party member the hair gets dumped into.
"Not" saying an item destroying bug doesn't exist, but this "might" save someone going back to do that fight over or missing out entirely on an honor run.
