What are hammers, ropes, plates etc. used for?
Are they useful for something or should I sell them? There are lots of them in my inventory, and it's making me feel overwhelmed tbh.

Useless crap. Not sure why this was even put in the game. Waste of my time...and for sure a waste of theirs. =/

Not really,

At the start we thought it could be useful.

Larian and CDPR both have this weird love of filling their games with useless items and loads of empty containers.

So is the only item worth keeping the shovel? What about the pickaxe? Is there ever an opportunity to mine something later on?

There is, but you can just use a bludgeoning weapon.

That's true, but Larian did it better. Choice number 2 is only available if you have a rope in your inventory and there are other examples.

I held onto the rope in my bag throughout the whole of act 1 bc I was convinced I was gonna need it. It's just trash

I was hoping the rope would at least be useable.

In the smallest level it makes the world feel lived in. I guess.

It makes the game's walkthrough longer if you have to sort through all this crap all the time, not to mention selling them, picking them up, and so on. It is also a good way to inflate every single item's worth as well, beside scrolls. Just take a look at the armour, weapon and scroll prices. A detect thoughts or darkvision scroll costs more than an xbow or a scale mail:P
Larian has some of these trolling kind of systems in their games. The filler junk items is one of these.

be aware many of those items can used on a tricky way :)
the thing , Larian's game many feature or the use of some specific items can ony discover by exploring and trying some stuff .

like easting some wied food to discover theur effect and thinking they can be used to make some good potion ^^

I personally like the immersion of useless items. My one main gripe is that they took a massive shortcut making BG3 by using their D:OS and D:OS2 assets. So a LOT of the items that had many uses in those games are present, but due to D&D 5e being...well...5e...they have little or no use outside of RP.

I do feel like they truly wanted to do more but the WoTC/Hasbro team really locked them down. I'm sure unofficial patches and modding will add some interesting things back in that are sitting right behind severed links in the code.

Immersion, duh.
