Is it possible to build a Summoner in this game?

Wanted to ask before purchasing because summoner is my favorite rpg class in general >.<

Not really. Ranger can have summon a familiar(choose from a few different small animals) and a more beefy animal with the right choices. Mage can summon a familar and later animate dead. One of the warlock subclasses can get an imp/quasit/animal. There's also some scrolls/wands that can summon stuff but, think that's about it. Oh, and late game mages and druids can summon elementals.

closest might be necromancer or druid, necro can have infinite summons with zombies (if zombie kills enemy that also turns into zombie, and chains more and more, while healing each time they kill someone) and druid can do some summons and summon himself essentially

There are some summon spells in the game so you can kind of focus in summons as those become available. You can summon like familiars, then elementals, druid can summon a dryad which itself can summon a wood guy, cleric can create undead from corpses. Elemental and undead summons kind of need to be left parked outside when interacting with in a town or whatnot because NPCs will run from them sometimes.

I haven't gotten to levels 11 and 12 so not sure if there are more end game summons yet.
