Typically if an enemy goes invisible every turn, if you're paying attention you can just remember where they are and hit them with an AoE. They don't move or act other wise if they're invisible unless you walk by them and they get an opportunity attack in which case that blows their invis anyway.
The reason NPCs can do the invis scan is so things can't be completely cheesed and made trivial. Or have certain scripted fights break.
Dancing lights also works, if you have a cantrip that lights up the area, it might force them to perform a saving throw
Just use it.
Or, use abilities like cleave or splash like acid splash on where they vanished.
Your comment is also incorrect as it does work fine. But is still tied to dice rolls so can fail.
Sadly a number of table top options like grease, using mundane items like a bottle of oil, mud or cooking flour just are not an option in game.
