other than that theres no real reason to fight them if you dont want to, the only thing theyre blocking is an alternate route to the shadow lands.
The 2nd time thru I separated them, I used spells to get them apart and make movement towards each other harder, spells like lashing vine, thunder clap for push or pull, and weed growth to slow movement. The goal the same, kill them at the same time, if you fail then they have to move slowly for multiple turns to revive. They are undead so radiant or fire damage are extra effective and if you have some way to disingrate the corpse (not sure it's possible) they can't revive each other. I was only lvl 5 when I stumbled in to these fools but it wasn't a rough fight. Not sure it works but silence may also stop them?
when you fight them have him trip so that the rest of party can focus the dude when prone. rinse repeat. also cloud of daggers spell helps since this is probably the only viable aoe spell you have at this point or maybe grease. if you have 3rd lvl spells available then spirit guardians (for the cleric) plus spiritual weapon. for wizard spells at 3 lvl fire ball.
hope this helps.
Fireballs and such are nice, but you can also melee them to death.
You gotta kill rhe death sheperds at the same time, they are annoying, I recommend using throw spells or skills, to separate them then put some kinda rough terrain between the 1 split off so it's hard to get to him. Also any radiant damage you have is good against undead, if you have a cleric the turn undead spell phenomenal.
That's very useful for these Death Shepherds.
The other thing is they are highly vulnerable to ice and I think grease etc., don't think they're too hot on the DEX. They can't rez ♥♥♥♥♥ if they're on their arses.
The big things are to bring both Death Shepherd's HP down at the same time so eventually you can kill both on one turn and to watch out for that Ghast as it's lot more dangerous than the Ghouls. Mercifully the Shepherds may be able to rez at will but they can't heal, that's important.
Slow would be a very good spell to use in this situation if someone's got it. I'm not sure if the Shepherds are immune to it though.
Lastly it's a lot easier to progress via the Underdark route if this battle is too much for your party at the moment and you haven't got the required spells/abilities. You can always do this fight later when you're stronger.
