Question about multiplayer and quests
Never played out of single player before. My aunt has PS4 and I have PC, we can now crossplay. We both create our own characters so no issue with taking any companions. But what happens to quests overall?

For instance, I pick up a quest. Can she pick up the same one later on or does it check off for the both of us once completed, even if one of us never did it? Like if she were halfway across the map doing her own thing and I completed it over on my half when she had zero involvement with doing it

Just want to make sure we don't accidentally cut out half the game's content for each other. Lol

Also any other advice? Are there any builds that won't mix? I currently have a Druid thats heavily into charisma and sleight of hand/picking locks. What would be a good suggestion for her, as a kind of synergy?

All players share the same journal; it will look exactly the same between all of you at all times; if you pick up a quest it will show up in their journal, and if they progress the quest it will update on your journal too.

It makes no difference, you can play shoulder-to-shoulder or separately. It depends on what you want.

Story is the only thing you can potentially miss out on:
If you both want to experience the story/conversations/cut-scenes at the same time, then yes, you'll want to stay near each other. But, if the other player is in a different area they can still experience the story: If a player is in a cut-scene/conversion, the other can click their portrait and experience it too even if they are a million miles away.

You'll never miss out on material things:
Experience is shared: If you kill a goblin everyone gets the EXP for it, even if they didn't participate in the battle. If your buddy turns in a quest everyone gets the EXP for it even if they never touched it.

Material rewards stay the same: If a quest gives you a Longsword of Awesomeness +69 then you still only get the one, you'll have to decide who gets it.
