Well, if you wanna make your character a Death Knight, I'd start here ...

With this Death Knight class mod.
https://mod.io/g/baldursgate3/m/death-knight#description

BTW, I think there are two other variants of DK on mod.io, but that one seems both the most recent (and ready for Patch 8) and the most complete.
I don't use mods
would taking 6 levels of death domain cleric and 6 levels of paladin breaking the oath and becoming a oathbreaker

Then from vanilla options, I'd say you might want to go with an Oathbreaker Paladin/Death Domain cleric multi-class. Or maybe Necromancy wizard.

EDIT: seeing you just asked above, if you're going to stick to 12 levels only (I use ULC) ... yeah, I think so.

Since you don't use mods, you can't start out as an Oathbreaker; you'll have to start out as some other oath paladin, and then break your oath.

the necromancy wizard sounds like a unholy death knight and the death domain cleric with great weapon fighting style 2 handed weapons since arthas when he becomes a death knight he doesn't use a shield

Oathbreaker Paladin(7) & Giant Barbarian(6) is what comes to mind.
Your main stat will be Strength and charisma and your charisma modifier will be added to melee attacks with Oathbreakers Aura of hate. With oath breaker you can also command the dead.

Giant barbarian so you can turn big, reduce damage taken and add frost damage to your weapon attacks.

Order you can do oathbreaker Paladin with hexblade warlock so you don't need strength and can max out your damage bonus from charisma because of the weapon bind. But the main class is OB Paladin.

Death Domain Cleric would be pretty cool a unholy vibe, not sure how well it'd work because the spell modifier between paladins and clerics are different.
I would start my stats with 16 charisma and 16 wisdom 15 strength then constitution at 14 then I will boost my strength to 17 for two levels and boost charisma and wisdom to 17
that depends if I go cleric paladin if were to go the necromancy route then inteligence at 16 charisma 14 strength 16 constitution 14
